Process 04
Cutting machines for vegetables and potatoes
The cut geometry is your product. We design the cutting step around your target shape – from the classic French fry strip to halves and quarters for peeled produce.

Cutting: our designs
Every design is engineered for your raw product, its degree of soiling and your target capacity.
Hydro cutting system
The product is accelerated in a water flow and guided through the knife grid: clean edges, hardly any breakage.
Halving machine
The optimised halving unit is available as an option in both EIMA peeling lines.
Quartering machine
Quarters peeled produce for convenience products and food service packs.
Design
What matters when sizing the machine.
This is the information we need to recommend the right design and size for you.
-
01
Target geometry
Strip, half or quarter: cross-section and length determine the knife grid or cutting head.
-
02
Raw material size
Tuber size affects yield and the share of short pieces. A grading step upstream reduces the spread.
-
03
Cut quality
Clean edges mean less breakage and less starch release in the following steps.
-
04
Throughput
The target quantity in kg/h determines the size and the infeed.

Frequently asked questions
Cutting: frequently asked questions
The product is accelerated in a water flow and guided through the knife grid. The result is clean edges and very little breakage.
Clean edges pay off in the following steps: less breakage and less starch release. The knife grid follows your target geometry, that is the cross-section and length of the strip.
When the product is processed further in halves or quarters rather than as strips. The quartering machine quarters peeled produce for convenience products and catering containers.
The optimised halving machine is provided as an option in both EIMA peeling lines.
Tuber size affects yield and the share of short pieces. A grading step upstream reduces the spread.
Off-cuts are not lost in the process: the shredder returns residual pieces to further processing, for example into the potato flakes line.
